Born in Portugal, Chef Ricardo had his first culinary inspiration in his grandmother's simple dishes, often cooked in the fireplace.And so, when he emigrated to France, very early in life, he already had a taste for cooking.
After graduating from École Ferrandi, he began his professional career as a cooking apprentice at Le Clovis. The first restaurant he worked at was also his first Michelin Star restaurant.
Chef Ricardo has an enviable career, having worked at several award-winning restaurants with a total of 15 Michelin Stars.
Back in Portugal and now in front of Raiva restaurant, his cuisine is defined by the simple flavors of traditional Portuguese food but textured and with a contemporary presentation.
Today it is the vast regional culinary and gastronomic patronage that Chef Ricardo seeks for his daily inspiration. In addition, the choice of the menu is always made to be consistent with the season, selecting the best local products.
Raiva is not just small town where our restaurant is located, Raiva and the Region of the lower Douro are the home of unique regional delicacies. From kid to veal, from sweet water fish to octopus, from regional jams to the best bread pudding in the world, without forgetting our local cooking traditions: Ceboladas, Vinha d’alhos, Lagareiro... A simple, relaxed and very traditional cuisine that brings to the table the best that this region has to offer. But ... Raiva is also the emotion you feel when choosing from this menu.
